|Phodni cha bhat - Ingredients - left over rice (2 cups), onion (kanda) 1/2 medium sized, peanuts (1 heaped tablespoon), green chilis (as per taste), curry leaves (3 to 4), mustard seeds (raee) (1/2 teaspoon), hing (asafoeteda) (1 pinch) , salt (to taste), turmeric (haldi) (1 pinch), oil (2 tablespoons)
Method - Heat the oil in a pan, add mustard seeds (raee). Add cut onion, green chili and curry leaves after the mustard seeds begin crackling. Add a pinch of Hing and haldi. Add peanuts and stir till they turn brown. Add the rice and mix well. Put a lid and keep for 2 minutes on low flame.
NOTE - Break the lumps in the rice before adding. You can garnish the rice with coriander leaves chopped fine.
